Zapiekanka (Zappy for short) begins with an open-faced Fressen Bakery baguette layered with richly spiced mushrooms and oozy Polish Morski cheese. It’s toasted to perfection and finished with a generous drizzle of our house-made Zapi sauce and sprinkle of smoked paprika.

Threshold opened its doors in January 2019 in the beer-centric neighborhood of Montavilla. Owned and operated by wife/husband duo Sara and Jarek Szymanski, Threshold is a passion-project for the couple.

Our aim at Threshold is to continue what we've been doing since we first fell in love with brewing: share our craft with others, brew the beers we love, push boundaries and connect with our town and neighborhood. Threshold is about a shared community, a place to bring your family, a place to try good things and meet good people.

Jarek grew up in Wloclawek, Poland and immigrated to Portland in 2004 after falling in love with the Pacific Northwest. He's a perfectionist by nature and his approach to brewing is driven by a desire to produce an exceptional product to share with his city, his community, his family and his friends.

Sara, a Portland-area local, shares Jarek's passion for great beer and great hospitality. She manages the brewery's communications, marketing and logistics, working hand-in-hand with Jarek to share their love of all things craft.

Our beers are balanced, intriguing and bursting with flavor and aroma. We're not shy when it comes to experimenting with techniques and ingredients.
We also get excited about hops and have the pleasure of bringing in the best varietals the Pacific Northwest has to offer. In addition, we have established relationships with hop growers in Poland, brewing with both traditional and new wave Polish hops that you won't experience anywhere this side of the Pacific.
And while we love our fresh beers, we also can't resist a little wood. The back of our brewhouse is lined with whiskey and wine barrels, filled with big barrel-aged stouts and funky farmhouse ales.
